Kerala Kadala Kurry

This is a very simple and tasty recipe. Most keralites make this curry similar way and enjoy it with puttu for breakfast or sometimes dinner.

Ingredients:

Black Kadala – 1 cup
Shallots finely chopped – 1
Turmeric Powder – 1/4 tspn
Salt – to taste
Oil,Curry leaves
Roast and make a fine paste of:

Coriander powder – 1 ½ tspn
Fennel Seeds – 1/4 tspn
Dry red chilies – 3 to 4
Cinnamon – very small piece
Cloves -2
Coconut(grated) – 4 to 5 tspns

Mongolian Chicken

A tantalizingly delicious Indo-Chinese recipe “Mongolian Chicken”. This chicken dish is healthy and tasty.

1/4 cup Thin strips of white onions

Spring Rolls / Pan Rolls

No words to describe this starter. It is absolutely delicious! Pan Rolls have a universal appeal and element of surprise once you bite into this delicious cylindrical shaped wonder! Stuff them with vegetables, noodles and /or cooked and shredded meats and you can do wonders with it. Pan Rolls sometimes known as Spring Rolls are just worth the effort. Thanks to my Mother In Law who taught me every step of this recipe.

Ingredients:

For Pan cake Batter

2 cups All purpose flour
1 Egg
Salt to taste
Water as required

For the stuffing:

2-3 Spring onions, chopped
2 tsp Green chilli sauce
1 Tbsp Chopped ginger
1 Tbsp Chopped garlic
1/2 cup Carrots cut into thin strips
1/2 cup Cabbage, thin strips
1 cup Cooked shredded chicken
1/2 cup French cut green beans
1/2 cup Green bell pepper thin strips
2 tsp Soy sauce
Pepper
Salt to taste
Oil for frying

Sweet corn chicken soup

This soup is simply delicious, with lots of shredded  chicken as well as fresh corn kernals. Made from real chicken broth and perfectly seasoned, this is a perfect starter to any meal or perfect as a meal for one.

Ingredients

1 cup Cooked shredded chicken
1 tsp  Soy sauce
1 tsp  Vinegar
1 Tbsp Corn flour
3 cups Chicken broth
1/2 cup Corn kernels
1 tsp Ginger crushed
1 Tbsp oil
Salt
Pepper
1 large egg, beaten
Spring onion chopped

Method

Mix shredded chicken with soy sauce,oil,vinegar, corn flour, salt and pepper. Keep aside for 15 minutes.

Heat oil in a pot or a wok. Add crushed ginger. Stir. Add chicken broth, corn kernels and bring to a boil.

Add the chicken mixture to the hot boiling soup in the pot.

Then add the beaten egg in a thin stream very slowly stirring in a circuitous pattern. The egg should form threads.

Serve hot garnished with chopped spring onions and enjoy.

Ripe Mango Shake

Mango is rich in a variety of phytochemicals and nutrients. The fruit pulp is high in prebiotic dietary fiber, vitamin C, polyphenols and provitamin A carotenoids.

Ingredients

Ripe Mango – 2

Cold Milk – 1/2 cup

Chilled Water -1/2 cup

Cardamon – 2

Sugar – 1 cup

Directions

1 Peel off the skin of the mangoes and chop the mangoes into small pieces.

2 Grind the chopped mangoes with chilled water in a juice blender and strain it.

3 Add milk,cardamom and sugar to the strained mixture and blend again.

4 Pour the mango shake to juice glasses and garnish with cashewnuts and raisins.
