Eggless Chocolate cake

Here is a wonderfully simple recipe for an Eggless Chocolate Cake. You won’t even miss the eggs!

Ingredients

All Purpose Flour – 2 cups
Salt – 1/2 teaspoon
Baking Powder – 1 teaspoon
Baking Soda – 2 teaspoons
Unsweetened Cocoa Powder – 3/4 cup
Granulated Sugar – 2 cups
Canola Oil – 1 cup
Hot water – 1 cup
Milk 2% – 1 cup
Vanilla Extract – 1 teaspoon
All ready prepared vanilla pudding- 1/2 cup

Preparation

1. Preheat the oven to 350F.
2. Grease and flour the square cake pan.
3. Sift together the flour, salt, baking powder, baking soda, cocoa and sugar into a bowl.
4. In a large mixing bowl, add canola oil,vanilla extract,milk,vanilla pudding and hot water.
5. Add the dry ingredients into the liquid mixture slowly and blend well using a electric mixer.
6. Pour the batter evenly into the cake pan.
7. Bake for 30 to 40 minutes, until a wooden tooth pick inserted into the center of the cake comes out clean.
8. Allow the cake to cool and sprinkle some icing sugar over it.

Sukhiyan

Sukhiyan is another mouthwatering snack of Kerala. These are sweet green gram balls dipped in batter and deep fried. Similar to bonda preparation but a sweet delicacy. Try it for yourself and let me know the feedback…

Ingredients

Green gram (whole) – 1 cup
Jaggery – ½ cup
Grated coconut- ½ cup
Cardamom powder ½ teaspoon
Ghee- 1 tablespoon
Maida/All purpose flour- 1 cup
Water-as required
Oil-for deep frying
Salt a pinch

Method

1. Cook the Green gram adding 1 1/2 cup water, and when it is almost done add a pinch of salt. Do not overcook, then it will be difficult to mould into medium lemon size balls.

2. Heat Ghee in a heavy bottomed saucepan.When it melts, add jaggery. Mix well and let it melt.

3. Add the grated coconut,mix well.Add the green gram and cardamom powder.

4. Saute everything for a couple of minutes and then remove from the stove.

5. Make small lemon size balls with the cooked mixture.

6. Make a medium thick batter with Maida with a pinch of salt and water.

7. Heat oil in a wok.Once it starts smoking slightly,dip each of the green gram balls in the batter,coating it uniformly, and then gently transfer into the hot oil and deep fry till crispy texture.

 

Cajun Chicken Bites

Try placing a bowl of french fries or chips or a packet of cheetos infront of your little munchkins, you don’t need to say or do anything… the plate will be empty just in  few minutes… with a naughty smile .I am pretty sure Cajun Chicken Bites can substitute most of the junk food.

Ingredients

1. Boneless Chicken – 250 gm
Pepper powder – 1 tsp
Cajun seasoning- 2 tsp
Lemon juice- 1.5 tsp
Salt to taste

2. Whole wheat flour – 2.5 tbsp

3. Egg – 1, lightly beaten
Milk – 1 tbsp

4. Ground almonds – 1/2 cup
Bread crumbs – 2/3 cup

5. Oil for frying

Rice Flakes Balls (Aval Unda)

Similar to the rice balls(Ari Unda or Avalose Unda), but with a slight variation. Here, rice flakes (pressed rice) are used instead of rice grains. ‘Quick and Easy’ recipe for the busy working Moms & Dads.

Ingredients

1. Rice flakes (Aval) – 3 cups
2. Coconut (grated) – 1 cup
3. Jaggery (grated) – 1 cup
4  Cashew nuts- 1/2 cup

Pachamanga Arooli

Neither a chutney nor a pachadi…something in between… try it..you will like it.

Ingredients

3/4 Cup Raw green mango, finely diced

3/4 Cup Grated coconut

1/2 Cup Curd/yogurt

1/4 tsp Mustard seeds

1  Thai green chilli

1/2 tsp Salt

Method
1) Finely dice the mango.
2) Grind the grated coconut with 1/4 tsp of mustard seeds and chopped green chilli.
3) Whisk the Yogurt well.
4) Season with salt.
5) Add the ground coconut-mustard-green chilli paste,
6) Add the finely chopped raw mango,

Served with a garnish of raw mango slivers!
