Bird’s Nest

Bird’s nest is one of my  favorite appetizers. I don’t need any special occasions to make this; it’s often served as an appetizer or as an entree for dinner. The final touch differentiates it from the ordinary cutlets. I got this idea  from cookery show that is broadcasted on Asianet.

Ingredients:

Onion finely chopped- 3

Ginger/Garlic paste-2 tsp

Green chillies, finely chopped- 2

Turmeric powder 1/4 tsp

Garam masala-1 tsp

Cooked/Shredded meat or chicken 1 pound

Cilantro/Curry leaves chopped-1 handful

Potatoes boiled and mashed -2

Salt-as required

Kozhiyada

A nice snack to simply munch on or to go with tea. This sizzler which may be called ‘the relative of Samosa’, is a celebrity in ifthars and family gatherings… Yes! you can make the bet! You wouldn’t stop with one.. 🙂

All-purpose flour/Maida  1 cup

Salt 1/2 tsp

Water as needed

For the chicken filling

Chicken-cooked & shredded 1 cup

Coconut grated  1/4 cup

Garlic crushed 1 tsp

Ginger crushed 1 tsp

Onion chopped 1/2 cup

Green chillies chopped  2 No

Red chilli powder 1/2 tsp

Turmeric powder 1/4 tsp

Garam masala 1/2 tsp

Chicken curry masala 1/2 tsp

Curry leaves chopped 8 N0

Salt, as needed

Ingredients

Raw plantains or slightly ripe plantains  2 no
Canola Oil: for deep frying
Salt – 1 tbsp or as required, dissolved in 1/2 cup water, for sprinkling

Cookie ‘O’

Why the name cookie ‘O’? O for oatmeal.Oats contain more soluble fibre than any other grain, resulting in slower digestion and an extended sensation of fullness.One type of soluble fibre, beta-glucans, has proven to help lower cholesterol.I always wanted to make some cookies using oatmeal and now for real I have them for my son who is not a big fan of oatmeal.  Today, however, I wanted to try a new recipe with an aromatic  spice  from the east.

Ingredients

1 cup butter, softened
2 cups powdered white sugar
2 eggs
1 teaspoon vanilla extract
2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon salt
2 teaspoons ground cardamom
3 cups coarsely ground oats

Beef Carrot Filling

A Tantilizing filling with beef and carrot for your bread or stuffed bun recipe

Ingredients

Cooked and shredded beef – 2 cups

Grated carrot -1/2 cup

Green chillies chopped – 2 nos

Garlic crushed – 4 nos

Ginger crushed – 1 piece

White onions chopped- 2 small ones

Meat masala – 2 tsp

Garam masala powder 1 tsp

Black pepper powder 1 tsp

Canola oil – 3 tsp

Salt – As reqd

Cilantro/Curry leaves as reqd

Method

1)Heat oil in a pan.

2)Fry chopped onions to light brown, then add ginger-garlic ,green chillies,curry leaves and dry powders and cook for 2 to 3 minutes

3)Add shredded beef and  grated carrot , then let it cook on medium flame for about 5 to 8 minutes.

4) Garnish with chopped cilantro.
