Stuffed Date Fritters/ Eenthapazham Nirachu Porichathu

Stuffed Date Fritters remind me of Ramdhan spent in Abudhabi, UAE. When Ramdhan falls during July-August, you get different varieties of dates from the farm that are sweeter than honey and give you a jump start  while breaking a day long fast from dawn to dusk. Some Arab farm owners may gift you few kilograms of dates  just for visiting their farms.

Ingredients

Dates/Eethapazham 10 N0
Raw Cashewnuts  10 No
All purpose Flour 1/2 cup
Rice flour 2 Tbsp
Sugar 2 tsp
Salt a pinch
Water as needed
Oil for frying

Idiyappam(String hoppers)

Idiyappam or String hoppers is a culinary specialty in Tamilnadu, Kerala and Coastal areas of Karnataka. It is also popular in certain areas of Sri Lanka.
It is also called noolappam or noolputtu from the Tamil word for string, nool. It is made of rice flour, salt and water. It is generally served as the main
course at breakfast or dinner together with a curry (potato, egg, fish or meat curry) and coconut chutney. It is also served with sweetened coconut milk in Malabar region of Kerala.

Rice flour 2 cups
Water 3 cups
Grated coconut for garnishing(optional)
Salt to taste
Oil

Unniappam/Kuzhiyappam

A sweet made with rice flour,cream of wheat, banana and molasses/jaggery, fried in appakkara (unniappam chatti) just for this purpose.

Ingredients

Rice flour – 1 Cup

Sooji /rava /semolina -1 cup

Grated Coconut – 1/2 cup

Molasis (jaggery) syrup -1 cup

Cardamom Powder – 1 tsp

Banana (Palayankodan) – 1 cup chopped

Coconut oil/cooking oil/ghee as required

Coconut pieces (optional) fried in ghee- 1/4 cup

Dried ginger – a pinch

Cumin – a pinch

Baking  soda- a pinch
