Kerala Beef Fry

Kerala Beef Fry is one of the traditional recipes that can be cooked without much effort. The beef is cooked and roasted in coconut oil with the aromatic flavours of Indian spices,curry leaves and roasted coconut. This is still the “most wanted delicacy” from Kerala for those Malayalis staying abroad. The beef that’s available in Kerala has more protein and less fat unlike the beefed up beef of North America.

Eggless Shah Jeera and Cardamom Cake

An eggless cake flavoured with shah jeera and cardamom which will definitely become one of your favorites. This is a nice basic recipe to have on hand for folks who need an eggless cake for various reasons whether health, allergic, religious etc.

All Purpose Flour 1 and 1/2 cups
Baking Powder 1 and 1/2 tsp
Baking Soda 1/2 tsp
Salt  1/4 tsp
Sugar/Splenda 3/4 cup
Butter, Softened 1 stick or 8 ounce
Unsweetened Applesauce  1/4 cup
Yogurt 2%  1/2 cup
Milk 3 Tbsp
Vanilla Extract 1/2 tsp
Ground cardamom 1 tsp
Shah Jeera 2 tsp

Cream of Broccoli Soup

Broccoli and other cruciferous vegetables including cauliflower, brussels sprouts, cabbage, turnip greens and kale are rich in antioxidants, which help protect against both cancer and heart disease.The cancer protective effects may be due to the Indole-3 carbinol, the carotenoid pigments, vitamin C, or sulforaphane acting together. Never microwave these cruciferous vegetables. Either stir fry or steam them.

Try crepes with maple syrup,combination of berries and whip cream, with banana and cream, with cinnamon and brown sugar, with spinach, egg and cheese, or with creamed chicken and mushrooms. Actually, one of my favourites is a spinach ,egg  and cheese crepe,Yum!
