Turkey Pathiri/ Turkish Pathil

Presenting to you another traditional Malabar snack- Turkey pathiri or Turkish Pathil.Why did the Malabaris name it Turkey pathiri- is it the bird Turkey or the country Turkey been referred to? Some folks call it Kumbala Pathil resembling wintermelon. This delicacy is stuffed fried puris within another stuffed fried puri. You can make as many layers as you want, if you have the patience to make it. Some recipes have a whole boiled egg within the innermost fried puri.I have the recipe for two layered Turkish pathiri with beef filling in the inner puri and chicken filling in the outer puri.

Erachi Pathiri – Pan Fried

Erachi pathiri with a different style than the traditional one. The authentic recipe includes frying puris stuffed with spiced meat preferably in circular shapes,dipping the fried puris in light sweet egg mixture and then shallow frying the egg coated fried puris. I had to alter the tradition to fit my style to make it more healthier so that I could munch on few more guilt free pathiris. My recipe includes rice pathiris with meat filling folded and then pan fried. A three step procedure cut short to one step process similar to panfried Meen Pathiri.Cooking Erachi Pathiri  made easy and tasty. Enjoy!

Malabar Kadala Parippu Payasam/ Split Bengal Gram Payasam

Payasam and Malayali go hand in hand. “Payasam”, also known as “kheer”, the basic ingredients being milk or coconut milk and rice, wheat or lentils. It is usually sweetened with sugar or jaggery depending on the kind of payasam being made. This is a traditional Ramdhan special payasam during ifthar or nombuthura.
