Vanishing Oatmeal Almond Cookies

Extra nutrients, no hydrogenated (trans) fat, preservative free and easy to make cookies. They are absolutely perfect for little kids and busy moms.

Ingredients:

Unsalted Organic butter, softened   1 stick

Canola oil   6 tablespoon

Light brown sugar   1 cup

Granulated white sugar ¼ cup (optional)

Large brown eggs 2

Vanilla 1 teaspoon

Unbleached all-purpose flour   1-1/2 cup(s)

Baking Soda ½ teaspoon

Baking powder ½ teaspoon

Ground cardamom  1 teaspoon

Salt  ½ teaspoon

Old fashioned rolled oats (coarsely ground) 3 cups

Coarsely ground raw almonds 1 cup

Chocolate Almond Cookies

The chocolate flavor of this cookie relies on the brand of cocoa powder you use. For this recipe I have used Dutch-processed cocoa powder which is cocoa powder that has been treated with an alkali to neutralize its acids. It has a reddish-brown color and its flavor is milder than natural unsweetened cocoa powder.My favorite brands are Droste and especially Valrhona.

Cookie ‘O’

Why the name cookie ‘O’? O for oatmeal.Oats contain more soluble fibre than any other grain, resulting in slower digestion and an extended sensation of fullness.One type of soluble fibre, beta-glucans, has proven to help lower cholesterol.I always wanted to make some cookies using oatmeal and now for real I have them for my son who is not a big fan of oatmeal.  Today, however, I wanted to try a new recipe with an aromatic  spice  from the east.
