Cajun Chicken Bites

Try placing a bowl of french fries or chips or a packet of cheetos infront of your little munchkins, you don’t need to say or do anything… the plate will be empty just in  few minutes… with a naughty smile .I am pretty sure Cajun Chicken Bites can substitute most of the junk food.

Ingredients

1. Boneless Chicken – 250 gm
Pepper powder – 1 tsp
Cajun seasoning- 2 tsp
Lemon juice- 1.5 tsp
Salt to taste

2. Whole wheat flour – 2.5 tbsp

3. Egg – 1, lightly beaten
Milk – 1 tbsp

4. Ground almonds – 1/2 cup
Bread crumbs – 2/3 cup

5. Oil for frying

Beef Achar

Beef achar is a tasty pickle item prepared in Kerala.It had always been by companion during my hostel life. For all those meat lovers who wishes to have meat for their meal time,prepare a pure vegetarian meal and give 2 teaspoons of this pickle on the side..they will happy and content.

Ingredients:

Beef – 1 kg
Garlic – 2 pods peeled and chopped
Ginger – 2 inch piece finely chopped
Black pepper powder- 1tsp
Garam masala powder- 1 tsp
Vinegar – 1/2 cup
Chilly powder – 2 to 4 tbsp
Turmeric powder – 1/2 tsp
Green chillies slit- 5 No
Curry leaves – few springs
Sesame oil/Gingelly oil – 1/2 cup
Asafoetida powder-1/2 tsp

Stuffed Meen Pathiri

Pathiri is a pancake made of rice flour. It is part of the local cuisine among  the Mappilas of North Malabar and Malabar in Kerala State of Southern India. Crushed rice is made into a white dough and baked on pans called oadu.Variants of pathiri include neypathiri (made with ghee), poricha pathiri (fried rather than baked), meen pathiri (stuffed with fish), and irachi pathiri (stuffed with meat). Meen pathiris are steamed pancakes filled with a spicy fish masala but here in my recipe, I have them pan fried.

Ingredients

For frying fish:

King fish 2 Big pieces
Kashmiri chilli powder 2 tsp
Coriander powder 1 tsp
Turmeric powder 1/2 tsp
Fennel Powder 1/2tsp
Salt as needed
Lime juice 1 tsp
Coconut oil for frying

Kerala Beef Puffs in disguise

There it is… My Daring Baker’s challenge – Danish Braid. It looks lovely, doesn’t it, or is it just me? I am so happy that I got to finish my challenge, and it’s almost perfect. It is supposed to have chocolate or sweet fruit filling but here I have spicy beef veggie filling. Now I can say that I love my spicy danish pastry puff a lot!!

Ingredients

Pastry puffsheets – 2 nos

Beef(ground) – 1 lb

French cut green beans- 1/2 cup

Grated carrot -1/2 cup

Green chillies chopped – 2 nos

Garlic crushed – 4 nos

Ginger crushed – 1 piece

Red onion thinly sliced – 1/2 of one

Meat masala – 1/2 tsp

Cooking oil – 1 tsp

Salt – As reqd

Cilantro/Curry leaves as reqd

Method

Beef Filling

1)Heat oil in a pan.

2)Fry thinly sliced onions to light brown, then add ginger-garlic ,green chillies and meat masala and cook for 2 to 3 minutes

3)Add ground beef and cook for 20 minutes

5) Saute the vegetables separately in oil and add to beef mixture.

Puff Pastry Shaping- Danish braid

1)Divide the thawed frozen pastry into two equal pieces. Roll out half of pastry on a lightly floured surface into a 9-inch (25 cm) rectangle.

2)Spread beef filling in the middle third of the pastry of rectangle.

3)Cut 1-inch (2.5 cm) wide strips on either side of remaining pastry. Fold strips on each side alternately over filling to create a braid.

4)Place pastry onto a parchment lined baking sheet.

WHISK together egg and water and lightly brush top of pastry.

PREHEAT Oven to 375 degrees

BAKE for 20 to 22 minutes or until pastry is golden.

REMOVE baking sheet from oven and let cool slightly. Enjoy with chilli sauce or ketchup!!!!

Chicken Shallow Fry

Easy to make yet another healthy fry variety of the Universal “Chicken”

Ingredients:
Chicken – 250g (bone less)
Turmeric powder – 1/4 tsp
Chilli powder – 1/2 tsp
Pepper powder – 1/2 tsp (freshly ground)
Ginger garlic paste – 1/2 tsp
Chicken masala – 1/2 tsp
Curd – 2 tsp
Salt – To taste
