Cream of Broccoli Soup

Broccoli and other cruciferous vegetables including cauliflower, brussels sprouts, cabbage, turnip greens and kale are rich in antioxidants, which help protect against both cancer and heart disease.The cancer protective effects may be due to the Indole-3 carbinol, the carotenoid pigments, vitamin C, or sulforaphane acting together. Never microwave these cruciferous vegetables. Either stir fry or steam them.

Sweet corn chicken soup

This soup is simply delicious, with lots of shredded  chicken as well as fresh corn kernals. Made from real chicken broth and perfectly seasoned, this is a perfect starter to any meal or perfect as a meal for one.

Ingredients

1 cup Cooked shredded chicken
1 tsp  Soy sauce
1 tsp  Vinegar
1 Tbsp Corn flour
3 cups Chicken broth
1/2 cup Corn kernels
1 tsp Ginger crushed
1 Tbsp oil
Salt
Pepper
1 large egg, beaten
Spring onion chopped

Method

Mix shredded chicken with soy sauce,oil,vinegar, corn flour, salt and pepper. Keep aside for 15 minutes.

Heat oil in a pot or a wok. Add crushed ginger. Stir. Add chicken broth, corn kernels and bring to a boil.

Add the chicken mixture to the hot boiling soup in the pot.

Then add the beaten egg in a thin stream very slowly stirring in a circuitous pattern. The egg should form threads.

Serve hot garnished with chopped spring onions and enjoy.

This is one of my favorite soup in the whole world. To top it off, this mineral rich bone soup is very good for health.

Ingredients

Goat/Mutton – 250 gm

Bay leaves –  2

Pepper corns –  2 tsp

Cinnamon – 1 stick

Cloves-2 no

Onions(chopped) – 1

Carrots(chopped) – 2

Broccoli head (chopped)-1 medium

Ginger (crushed) – A small piece

Green chillies( chopped )- 1No

Salt – As reqd

Pepper powder – As reqd
